Spicy Cucumber & Water Chestnut Kimchi

100 gmscucumber, peeled, shavings

100 gms Water chestnuts, peeled,shavings

100 gms palm fruit (tadgola), peeled, shavings

Salt to taste



1 tbsp garlic, chopped

2 spring onions (white & light green part only), finely chopped

1 tsp ginger, peeled & finely chopped

2 tbsp rice vinegar

1 tsp Korean chili powder/ cayenne pepper

2 tsp honey

½ tsp veg oyster sauce/ light soy sauce



1 tbsp white & black sesame seeds, toasted

  • In a mixing bowl add all the salad ingredients and add dressing and toss well.
  • Serve immediately. Topped with sesame seeds.
